Slow-Cooker Massaman Beef Curry Recipe
Ingredients

  • 2 pounds (1 kg) beef chuck or beef shin, cut into large chunks
  • 2 tablespoons (30g) Massaman curry paste
  • 2 tablespoons (30g) vegetable oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon (15g) grated fresh ginger
  • 1 can (14 oz/410g) coconut milk
  • 1 cup (250ml) beef broth
  • 1 tablespoon (15g) fish sauce
  • 1 tablespoon (15g) brown sugar
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper, to taste
  • Fresh cilantro or Thai basil, chopped (optional)

Instructions

  1. Brown the beef (optional): Heat the oil in a large skillet over medium-high heat. Add the beef chunks and brown until browned on all sides, about 5 minutes. Transfer the beef to the slow cooker.
  2. Soften the onion: Reduce the heat to medium and add the chopped onion to the skillet. Cook until the onion is softened, about 5 minutes.
  3. Add the curry paste: Add the Massaman curry paste to the skillet and cook, stirring constantly, for 1-2 minutes.
  4. Add the remaining ingredients: Add the cooked onion, garlic, ginger, coconut milk, beef broth, fish sauce, brown sugar, cumin, coriander, cayenne pepper, salt, and pepper to the slow cooker. Stir to combine.
  5. Cook on low: Cook the curry on low for 8-10 hours or on high for 4-6 hours.
  6. Serve: Serve the Massaman beef curry hot, garnished with chopped fresh cilantro or Thai basil (if desired). Serve with steamed rice or noodles.
