Slow-Cooker Massaman Beef Curry Recipe
Ingredients
- 2 pounds (1 kg) beef chuck or beef shin, cut into large chunks
- 2 tablespoons (30g) Massaman curry paste
- 2 tablespoons (30g) vegetable oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon (15g) grated fresh ginger
- 1 can (14 oz/410g) coconut milk
- 1 cup (250ml) beef broth
- 1 tablespoon (15g) fish sauce
- 1 tablespoon (15g) brown sugar
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- Salt and pepper, to taste
- Fresh cilantro or Thai basil, chopped (optional)
Instructions
- Brown the beef (optional): Heat the oil in a large skillet over medium-high heat. Add the beef chunks and brown until browned on all sides, about 5 minutes. Transfer the beef to the slow cooker.
- Soften the onion: Reduce the heat to medium and add the chopped onion to the skillet. Cook until the onion is softened, about 5 minutes.
- Add the curry paste: Add the Massaman curry paste to the skillet and cook, stirring constantly, for 1-2 minutes.
- Add the remaining ingredients: Add the cooked onion, garlic, ginger, coconut milk, beef broth, fish sauce, brown sugar, cumin, coriander, cayenne pepper, salt, and pepper to the slow cooker. Stir to combine.
- Cook on low: Cook the curry on low for 8-10 hours or on high for 4-6 hours.
- Serve: Serve the Massaman beef curry hot, garnished with chopped fresh cilantro or Thai basil (if desired). Serve with steamed rice or noodles.
